Buffalo Chicken in the Slow Cooker



Buffalo Chicken in the Slow Cooker
Slightly adapted from Slow and Simple

Ingredients:
18 oz raw boneless, skinless chicken breasts (yields 12 oz cooked)
1/4 cup Frank's Hot Wing Sauce (4 Condiments)
2 tbsp light margarine, melted - I used Land O' Lakes Light Butter with 5g fat and 50 calories per tbsp (2 Healthy Fats)

Directions:
Combine hot wing sauce and margarine in a slow cooker. Add chicken breasts and toss to coat in sauce. Cook on low for 6 to 8 hours. Shred chicken in the pot (optional).

2 Servings with 1 Lean, 2 Condiments and 1 Healthy Fat per Serving

Jen's Chicken Parmesan (Crock Pot)

If you do not want to use the marinara sauce below, there is another one that looks equally delicious with less condiments. The other recipe is from Skinny Taste by Gina called Quick Marinara Sauce. It looks very yummy and is so simple to make. 



Chicken Parmesan (Crock Pot)

Ingredients:
36 oz raw boneless, skinless chicken breasts - should yield 4 ~ 6 oz portions (4 Leans)
2 cups crushed tomatoes - less than 5 g carbs per 1/2 cup serving  *I used a 28 oz can but measured out 1/2 cup to eat per serving (4 Greens)
1/2 tsp Italian Seasoning (1 Condiment)
1 tsp Basil (1 Condiment)
1/4 tsp Onion Powder (1/2 Condiment)
2 cloves garlic (2 Condiments)
2 tbsp Grated Reduced Fat Parmesan Cheese (2 Condiments)

Directions:
Place chicken in a slow cooker. Combine all the other ingredients in a medium bowl. Pour over chicken. Cook on low 6 to 8 hours. Serve with 1/2 cup sauce.

4 Servings with 1 Lean (6 oz Chicken), 1 Green (1/2 cup Sauce), and 1.6 Condiments per serving
