Medifast Fudge Balls

The recipe states to reserve 2 tbsp of the chocolate shake mix, but my balls didn't use but half of that. So I had to make a little shake with the rest of it because I didn't want it to go to waste. These suckers turned out really good! Who says you can't have chocolate on a diet?! Again, Happy Valentines Day to you all!


Medifast Fudge Balls

Ingredients
1 MF Chocolate Shake, divided (1 Meal)
1 MF Chocolate Pudding (1 Meal)
1 tbsp caramel or chocolate syrup (1/2 condiment)
1 tbsp PB2 (1/2 snack)
Little less than 1/2 cup water

Directions:
Reserve 2 tbsp chocolate shake mix and set aside. Combine the rest of the chocolate shake mix, pudding mix, caramel or chocolate syrup, and PB2 in a small bowl. Slowly add a little less than 1/2 cup of water so that the mixture is still firm enough to shape into balls. Form balls from the mixture. Roll the balls into reserved shake mix. Refrigerate until firm about 30 minutes.


2 Meals with 1 Meal, 1/4 Condiment and 1/4 Snack per Serving

Vanilla Custard

Ingredients:

1 MF Eggs (1 Meal)
1 Vanilla Pudding (1 Meal)
1 cup water
1/4 tsp cinnamon (1/2 condiment)
1/2 tsp vanilla (1/2 condiment)
1 packet Splenda (1 condiment)
1 tbsp Da Vinci sugar free syrup (1/2 condiment - optional)

Directions:
Mix ingredients in blender. Pour into sprayed ramekin or baking dish. Bake at 350 degrees for 20 minutes.

2 Servings with 1 MF Meal and 1 or 1.25 Condiments per Serving

Ingredients:
1 Medifast Vanilla Pudding or Vanilla Shake (1 Meal)
1/2 cup ice
1 cup diet root beer (make sure there are 0 carbs)

Directions:
Combine ingredients in a blender and blend until smooth.

Ingredients:
MF Chocolate Pudding (1 Meal)
1/2 cup water
1 tbsp Powdered Peanut Butter PB2 (.50 Snack)
1 tbsp Walden Farms Chocolate Syrup (.50 Condiment)

Directions:
Combine pudding mix, water and PB2 and stir with a whisk. Pour into a small container. Freeze for 30 to 45 minutes. Before eating, top with Walden Farms Chocolate Syrup. Enjoy!

Ingredients:
1 package of MF Vanilla pudding (1 Meal)
1 egg white
1/2 tsp vanilla extract (1/2 Condiment)
1/2 tsp pumpkin pie spice (1 Condiment)
1 packet Splenda (1 Condiment)
1/2 cup water

Directions:
Preheat oven to 350 degrees. Spray a ramekin with cooking spray. Mix all ingredients in a blender. Pour into prepared ramekin. Bake for 20 to 25 minutes or until set. Serve warm or refrigerate overnight. I placed it in the fridge overnight.

Ingredients:
1 Medifast Banana Pudding (1 Meal)
1/2 cup water
1/2 tsp Powdered Peanut Butter (1/12 Snack)
1 tsp Walden Farms Chocolate Syrup ( 1/6 Condiment)

Directions;

Mix pudding mix with water and allow to set. Stir in PB2 until combined. Add chocolate syrup and swirl around but do not completely mix. Enjoy!

Coconut Pudding

When using coconut milk, make sure you account for the number of condiments you use because 1/3 cup is 1 healthy fat if you use Thai Kitchen brand. So if I use it in the pudding, I would add 1/3 cup coconut milk and add enough water until I get a 1/2 cup of liquid. If I use it in a shake, I would use 2/3 cup coconut milk as 2 healthy fats and add enough water to equal 1 cup. I hope you enjoy the recipe!


Coconut Pudding

Ingredients:
1 MF Vanilla Pudding (1 Meal)
1/3 cup Thai Kitchen Lite Coconut Milk (1 Healthy Fat approved by NS)
Water
1/8 tsp coconut extract (.125 Condiments)
1/2 packet Splenda (.50 Condiments)

Directions:
Empty vanilla packet in a small bowl. Take 1/3 cup coconut milk and just enough water to make 1/2 cup of liquid and add to pudding. Add coconut extract and splenda and whisk until completely blended. Refrigerate for 15 to 30 minutes. Enjoy!

Ingredients:
2 maple and brown sugar oatmeals (2 Meals)
1 chocolate  pudding (1 Meal)
1 tbsp oil (3 Healthy Fats)
2 tbsp egg beaters (per NS you are allowed up to 2 oz of additional protein a day on occasion so I didn't count it)
1 tsp baking powder (2 Condiments)
1 tsp coconut extract (1 Condiment)
 3/4 to 1 cup water

Directions:
Preheat oven to 350 degrees. Spray a dish with Pam cooking spray (I used 3 brownie trays that I sprayed lightly with Pam). Combine all ingredients in a medium sized bowl and mix until blended. Pour into prepared pan. Bake for  22 minutes. Make sure your cake is set by using a toothpick to test the center of the cake. If it comes out clean, then it is done. Flip cake onto a baking sheet (I lined the baking sheet with parchment paper). Bake other side for 10 mins or until edges are crispy and brown. You could make cream cheese frosting by mixing 3 tbsp of regular cream cheese and 1 packet of splenda for a total of 2 Healthy Fats and 1.33 Condiments per serving. Or you could you 3 tbsp reduced fat cream cheese with 1 packet of splenda for 1 Healthy Fat and 1.66 Condiments per serving. I just sprinkled 1 packet of splenda over the top of the cakes for a total of 1 Healthy Fat and 1.33 Condiments per serving. You could also experiment with Walden Farms Chocolate or Caramel Syrup! Enjoy!



3 Servings with 1 Meal, 1 Condiment and 1 Healthy Fat per serving (without any toppings)

Cheesecake Ice Cream

This particular recipe doesn't really taste like cheesecake, but it was very good. It probably needs more cream cheese to be more like cheese cake but I am not using more of my condiments. It has more of a vanilla flavor so I added a 1/2 tsp of lemon extract. The lemon helped give it a subtle refreshing lemon taste like a lemon pie. Love it! Try it with vanilla extract for more vanilla flavor. Enjoy!


Cheesecake Ice Cream

Ingredients:
Vanilla Pudding (1 Meal)
1/2 cup water
1 tbsp light cream cheese (1 Condiment)
1/2 tsp lemon extract - I added this to give it a subtle lemon flavor (1/2 Condiment)

Directions:

Combine ingredients in a bowl and whisk until well blended. Pour contents in a small bowl with a lid and freeze for at least 30 minutes. 1-2 hours before you plan to eat, put in fridge to soften. Or you can decrease the water to 1/4 cup and add 1/2 cup ice in a blender to eat right away as soft serve.

1 Meal and 1-1/2 Condiments



  • Options: Try using chocolate pudding and mix some PB2 (Reeses), almond and coconut (for Almond Joy), or even heavenly hash from Cooking with Medifast. The possibilities are endless when you have chocolate and vanilla pudding to work with. What the heck! Try banana too while your at it. 

Butter Pecan Ice Cream

Ingredients:
Vanilla Pudding (1 Meal)
1/2 cup ice cubes, crushed
3 oz water
1/4 tsp coconut extract (1/4 Condiment)
1/4 tsp almond extract (1/4 Condiment)
1/2 tsp maple extract (1/2 Condiment)
Dash of nutmeg (Optional)

Directions:
Put all ingredients into blender. Mix ingredients for 2 to 3 minutes until smooth.

Banana Chocolate Cheesecake Bites

Ingredients:
1 packet Medifast Dutch Chocolate Shake (1 Meal)
1 packet Medifast Banana Pudding (1 Meal)
2 tbsp Light Cream Cheese (2 Condiments)
3 tbsp Water

Directions:
In a bowl, mix together Dutch Chocolate shake with 2 TB of water. Roll into 6 balls and press flat on a piece of wax paper. Mix together Banana Pudding with 2 TB of whipped cream cheese and 1 TB of water. Roll into 6 balls and place on wax paper. Press chocolate piece onto each banana piece and place chocolate side down on wax paper. Freeze for about an hour.

Bread Pudding

This one is very filling because of the added egg beaters. You can add a tablespoon of caramel or chocolate syrup from Walden Farms per serving. Serve it warm or cold! Enjoy!

1 packet MF maple and brown sugar oatmeal (1 Meal)
1 packet MF vanilla pudding (1 Meal)
1 packet splenda (1 Condiment)
3/4 c water
1/4 tsp baking powder (1/2 Condiment)
1 tsp of vanilla extract (1 Condiment)
1/4 tsp of cinnamon ((1/2 Condiment)
1/2 cup Egg Beaters (1/4 Lean)
2 tbsp Walden Farms Caramel Syrup (1 Condiment)

Directions:
Mix it all together and bake at 350F for 30 minutes, glass dish 7 x 5 x 1.5 or loaf pan.
I added SF caramel syrup (Walden Farms) for dessert one night. Delicious!

Ingredients:
1 MF choc pudding (1 Meal)
1 MF choc shake/ hot cocoa (1 Meal)
4 tbsp powdered peanut butter (2 Snacks)

2 tbsp water

1/4 cup unsweetened almond milk (NS approved as 1/2 Condiment)

Directions:
Combine all ingredients in a small bowl.  Form 8 fudge balls. 4 balls make 1 meal

Chocolate Mint Ice Cream Brownie Bottoms

Ingredients:
1 Medifast Brownie Mix (1 Meal)
1 Medifast Chocolate Mint Soft Serve Mix (1 Meal)
1/2 cup + 3 tbsp water, divided

Directions:
Spray two ramekins with cooking spray. Mix brownie mix with 3 tablespoons of water and divide into two prepared dishes. Microwave for 1 to 1 1/2 minutes or until done. Set aside and let cool completely.
Mix soft serve with 1/2 cup water in shaker jar.  Pour mixture over the two brownies, dividing evenly.
Freeze for atleast 1 hour.
