Zucchini Bread




Zucchini Bread

Ingredients:
1 Spiced Pancake packet (1 Meal)
1/4 c. shredded zucchini (squeeze out the liquid by rolling in paper towels and squeezing) (1/2 of 1 Green)
2 tbsp egg beaters
1.5 oz water
1 packet splenda ( I think I'll just use a pump of SF vanilla next time) (1 Condiment)

Directions:
Mix together and bake in whatever style you'd like. I did it on the waffle iron, super fast and yummy zucchini bread waffle. I think I'll try mini muffins next, or even as just a pancake. If you decide to bake these, bake at 350 degrees. The time will vary depending on what type of pan you are using.


1 serving with 1 Meal, 1/2 of 1 Green, and 1 Condiment

Pancake Muffins or Bread



Pancake Muffins or Bread

Ingredients:
1 Pancake mix (1 Meal)
1/4 cup water

Directions:

Combine pancake mix and water in a shaker jar. Shake well until combined. Pour mixture into a glass mug sprayed with Pam that is the same shape all around. Or pour into a small square container for bread. Microwave for 1 1/2 minutes. Pour out of glass or container and slice in half.

Option 1: Eat with walden farms fruit spread
Option 2: Cut in half and melt cheese in between
Option 3: Cut in half and toast the bread. Spray with ICBINB Spray, sprinkle cinnamon and splenda

Cinnamon Roll with Cream Cheese Icing




Cinnamon Roll with Cream Cheese Icing

Ingredients:
1 pancake mix (1 Meal)
2 tbsp water
1/8 tsp cinnamon (1/4 Condiment)
1 tbsp light cream cheese (1 Condiment)
1 packet Splenda, divided (1 Condiment)
Few sprays of I Can't Believe It's Not Butter Spray (if you have a healthy fat to use up, you can have 10 sprays as 1 Healthy Fat)

Directions:
Combine pancake mix, cinnamon, half packet of splenda, and water. Pour into a small container. Microwave for 50 seconds. Make sure you do not overcook it otherwise it will get dry. Spray the pancake with ICBINB spray. In the same bowl you used to make the pancake batter, combine cream cheese and the rest of the splenda. Mix around with the little bit of batter that was left in the bowl. This adds a bit of the cinnamon mixture into the cream cheese. Spread on pancake.


1 Meal, 2.25 Condiments and 1 Healthy Fat if you used the Butter Spray

Oatmeal Bars



Oatmeal Bars
(Found on Medifast Recipe Board) 
Ingredients:
1 MF Oatmeal Packet (1 Meal)
1 tbsp egg beaters
2 tbsp vanilla sugar free syrup (1 Condiment)
3 tbsp water

Directions:
Preheat oven to 350 degree. Stir ingredients together. Let sit 5 minutes. Pour into ramekin. Bake for 12 minutes or microwave for 1 minute in 1200 watt microwave. Cool. Cut into bars.

Maple Rolls with Cheesecake Icing

This recipe does have two healthy fats which is the regular cream cheese, so you have to be careful what you decide to have for dinner. Fat free cream cheese isn't recommended because it has higher carbs than low fat cream cheese...and low fat cream cheese would be two additional condiments on top of the two condimentsalready in the recipe. That would bring it up to 4 condiments per meal (too many to stay on plan)! It is better to use the regular cream cheese as a healthy fat. Enjoy!


Maple Rolls with Cheesecake Icing

Ingredients:
3 packets of Medifast Maple and Brown Sugar Oatmeal (3 Meals)
3/4 tsp baking powder (1 1/2 Condiments)
1 tsp maple extract (1 Condiment)
1 packet Splenda (1 Condiment)
1 tsp vanilla extract (1 Condiment)
1/4 cup water added slowly



Directions:

Mix all dry ingredients and then add vanilla and water slowly. I used just over 1/4 cup of water. The dough should stick together but be not too dry or too wet.
Divide dough into 3 balls approximately the same size. Place on greased cookie sheet (non-fat cooking spray) and flatten so they are approximately 1/4 to 1/2 inch thick. I used three individual glass dishes such as Pyrex because the dough was too crumbly. Bake at 350 degrees for approximately 15 minutes. Insert toothpick to determine if it is done. It should come out clean and the edges should be firm, but not too dry. Let cool. 

Cheesecake Icing

Ingredients:
3 oz regular cream cheese (6 Tbsp) (6 Healthy Fats)
1 packet Splenda, or to your taste (1 Condiment)
1/2 tsp lemon extract (1/2 Condiment)


Directions:

Cream mixture at high speed with a hand mixer until fluffy.
After Pumpkin Rolls cool, divide cream cheese batter equally on the top of the 3 Pumpkin Rolls. Keep refrigerated.
Yield: 3 Medifast Meals   Condiments per serving: 2   Healthy Fats: 2


Other Alternatives:

Strawberry Cheesecake: Replace maple extract with 1 tablespoon of Walden Farms Sugar Free Strawberry Syrup or Spread

Chocolate Cheesecake: Replace maple extract with 1 tablespoon of Walden Farms Sugar Free Chocolate Syrup or Dip


Pumpkin Cheesecake: Replace maple extract with 1 teaspoon pumpkin pie spice.

Bread Pudding

This one is very filling because of the added egg beaters. You can add a tablespoon of caramel or chocolate syrup from Walden Farms per serving. Serve it warm or cold! Enjoy!

Ingredients:
1 packet MF maple and brown sugar oatmeal (1 Meal)
1 packet MF vanilla pudding (1 Meal)
1 packet splenda (1 Condiment)
3/4 c water
1/4 tsp baking powder (1/2 Condiment)
1 tsp of vanilla extract (1 Condiment)
1/4 tsp of cinnamon ((1/2 Condiment)
1/2 cup Egg Beaters (1/4 Lean)
2 tbsp Walden Farms Caramel Syrup (1 Condiment)

Directions:
Mix it all together and bake at 350F for 30 minutes, glass dish 7 x 5 x 1.5 or loaf pan.
I added SF caramel syrup (Walden Farms) for dessert one night. Delicious!
