Chocolate Peanut Butter Cup


These are sinfully delicious. I used these reusable silicone cupcake liners from Walmart. It was so easy to peel them off when ready to eat and it gave that awesome ridged look on the sides. Enjoy!

Chocolate Peanut Butter Cup
(One serving fit perfectly into two cup cake liners...that means you can have two per MF meal!)

Ingredients:
1 package Hot Cocoa or brownie mix (1 Meal)
2 tablespoon PB2 (1 Snack)
1 packet of Splenda (optional)

Directions:
Mix 2 tablespoon of PB2 and Splenda with 1 1/2 tablespoon of water (until creamy but not watery). Set aside. In another container, mix hot cocoa with 3 tablespoons of water. Spread half over the bottom of a ramekin or silicone baking cup. Spread PB2 over the chocolate bottom layer. Spread the rest of the hot cocoa mixture over the top of the PB2. Place in freezer for at least one hour.


Servings: 1 Meal, 1 Snack and 1 Condiment (if you used Splenda)

This recipe uses PB2 (Powdered Peanut Butter). If you haven't been privileged enough to discover this amazing wonder, I recommend you do so now. I have seen them at Walmart, Sprouts, and www.netrition.com. Two tablespoons counts as an optional snack for the day and you can buy the regular or chocolate versions.

Slutty Brownie


Slutty Brownie

Ingredients:
1 MF brownie (1 Meal)
1 MF chocolate chip soft bake (1 Meal)
1/4 cup 1% Cottage Cheese ( 1/6 lean)
SF caramel syrup (or just a little vanilla extract) I used 1 tbsp Torani Sugar Free English Toffee Syrup (1/2 a condiment)


Directions:

 Mix up your brownie mix according to directions, split between two small ramekins.
Mix up your soft bake and set aside.
Whip the cottage cheese with the Syrup in Magic bullet to get the lumps out.
Pour the cottage cheese mixture over the brownie, then top with drops of the Soft bake.
Microwave 1 minute (it will be underdone).
Eat warm or freeze 30 minutes and then eat.



2 Servings with 1 Meal, 1/12 Lean, and 1/4 Condiment per serving

Peanut Butter and Cream Cheese Stuffed Brownies


Ingredients:

1 Brownie Mix (1 Meal)
1 tbsp PB2 (1/2 Snack)
1 tbsp light cream cheese (1 Condiment)

Directions:
Make the brownies as directed on the back of the package by adding 3 tbsp water to the mix and stir until combined. Set aside.
Place cream cheese in the microwave for 10 sec until softened. Add PB2 and 1/2 tbsp of water to the softened cream cheese. Stir until nice and creamy.


Use the disposable containers given with the brownies or any other container sprayed with cooking spray and pour half the brownie mixture into the container. Pour the peanut butter cream mixture over the brownie mixture and spread evenly over the top. Add the rest of the brownie mixture evenly over the top.

Microwave for 1 min and 30 sec. Let cool.

Katie's PB Brownie Ice Cream






Katie's PB Brownie Ice Cream Sandwiches

Ingredients:
1 Brownie Mix(1 Meal)
1 Peanut Butter Crunch Bar or any other bar you like such as Smores, Chocolate, etc (1 Meal)
3 tbsp water
2 tsp PB2 (2/3 Snack)
4 tsp whip cream (4 Condiments)

Directions:
Melt 1 brownie and 1 peanut butter crunch for 20 seconds. Add 3 tbsp water and mix. Spray a plate with cooking spray. Drop 4 spoonfuls of dough on plate. Microwave for 2 minutes. Add 1 tsp peanut butter to each of two cookies and then add 2 tsp of whip cream to each of the other two cookies. Place peanut butter cookie on top of cookie with whip cream. Place stuffed cookies in Ziploc container and freeze thoroughly. Each cookie is one meal.


 2 Servings with 1 Meal, 2 Condiments, and 1/3 Snack per serving

Haystack Cookies


Haystack Cookies

Ingredients:
1 MF Hot Cocoa or Brownie Mix (1 Meal)
1 MF Cinnamon Pretzel Sticks, crushed (1 Meal)
3 tbsp water
1 tbsp Peanut Butter (1 Snack)
1 packet Splenda - optional (1 Condiment)

Directions:
Crush the pretzels by opening one side of the bag and squeezing the bag to form crumbs. In a small bowl, combine hot cocoa or brownie mix with 3 tbsp of water to form a paste. Add 1 tbsp peanut butter and splenda; stir until combined. Add the crushed pretzels to the mixture and stir making sure the pretzels are evenly coated. Drop the haystacks on a piece of foil or plate forming 6 piles. Freeze for at least 30 minutes to an hour.

2 Servings with 1 Meal, 1/2 Condiment and 1/2 Snack per Serving


*Try adding 1 tbsp light cream cheese instead of the peanut butter for a different variation.This would be 1/2 Condiment or 1 Condiment if using Splenda instead of 1/2 a Snack.

Chocolate Mint Ice Cream Brownie Bottoms


Chocolate Mint Ice Cream Brownie Bottoms

Ingredients:
1 Medifast Brownie Mix (1 Meal)
1 Medifast Chocolate Mint Soft Serve Mix (1 Meal)
1/2 cup + 3 tbsp water, divided

Directions:
Spray two ramekins with cooking spray. Mix brownie mix with 3 tablespoons of water and divide into two prepared dishes. Microwave for 1 to 1 1/2 minutes or until done. Set aside and let cool completely.
Mix soft serve with 1/2 cup water in shaker jar.  Pour mixture over the two brownies, dividing evenly.
Freeze for atleast 1 hour.

Ingredients:

1 Brownie Mix (1 Meal)
1 Chocolate Pudding Mix (1 Meal)
2 tbsp Walden Farms caramel syrup (1 condiment)

Directions:
Mix 3 tablespoons of water with the brownie mix in a small bowl. Divide batter between two ramekins. Microwave for about 1 minute. Let cool completely.

Mix pudding with 1/2 cup of water in a small bowl. Divide pudding mix between the two ramekins with brownies. Drizzle 1 tablespoon caramel syrup on top of each brownie pudding cups. Swirl caramel into pudding with a knife. Refrigerate until set.

Ingredients:
1 Brownie Mix (1 Meal)
1 Peanut Butter Chocolate Crunch Bar (1 Meal)
3 tbsp water

Directions:
Combine brownie mix with 3 tbsp water and set aside. Place the crunch bar in the microwave for 20 seconds on high until it is slightly melted. Add the crunch bar into the brownie mixture until blended. Place the mixture into two separate ramekins or on a plate sprayed with cooking spray. Microwave for 2 minutes.

Makes 2 Meals

Chocolate Chip Cakes

These are especially good with the light laughing cow cinnamon cream cheese! Oh my heavens! Delish! You could always eat these plain or with a bit of cream cheese too! Enjoy this versatile recipe.

Chocolate Chip Cakes

 Ingredients:
1 packet Medifast Brownies OR 1 Chocolate Chip Soft Bake (1 Medifast Meal)

1 packet Chocolate Chip Pancakes OR 1 Spiced Pancakes OR Original Pancakes (1 Medifast Meal)
1/4 tsp baking powder (1/2 condiment)
1/4 cup water


Directions:
Preheat oven to 350 degrees. Combine the brownie OR chocolate chip soft bake mix with ONE of the pancake mixes. Add baking powder and water stirring until combined. Divide batter into two brownie trays or muffin tins and bake for 18 minutes or until done. 


This makes a total of 2 servings, 1 cake per meal.




 Each meal has 1/4 Condiment and is 1 Medifast meal

Chocolate Chai Fudge

Ingredients:
1 packet Medifast Hot Cocoa or Brownie (1 Meal)
1 packet Medifast Chai Latte (1 Meal)
4 TB Water

Directions:
Mix packets & water together in a bowl. Drop spoonfuls onto wax paper. This makes 8 1 TB fudge drops. Freeze for about 30-60 minutes.

2 servings with 1 Meal per serving (4 drops is 1 serving)

Chocolate Cake with Peanut Butter Filling or Cream Cheese Icing

Ingredients:
1 Chocolate Chip Pancake (1 Meal)
1 Brownie mix (1 Meal)
1/4 cup plus 2 tbsp water
2 tbsp PB2 (1 Snack)
tbsp Walden Farms Chocolate Syrup (1 Condiment)

Directions:
If using PB2, mix 2 tbsp PB2 with about 1 tbsp water to get desired consistency. Set aside.
Combine pancake mix and brownie mix with 1/4 cup plus 2 tbsp water. Place 1/4 of batter (or 1 heaping tbsp) in two separate brownie containers or muffin pan. Place half of the PB2 or half of the peanut butter in the centers of each brownie container. Pour 1/4 of batter over each brownie container to cover peanut butter. Bake 350 degrees for 15 minutes or until done or microwave for 2 minutes or until done (microwave times will vary so keep an eye on it). Drizzle with 1 tbsp chocolate syrup over each cake. Enjoy!

2 Servings, each inlcuding 1 Meal, 1/2 Snack with PB2 and 1/2 Condiment per serving


* Variation: Instead of PB2 or Peanut Butter: Combine 2 tbsp light cream cheese and 1 packet of splenda. Divide icing between the two cakes and spread on top. This will count as 1 1/2 Condiments per serving.

Banana Cheese cake Chocolate Cookies

Ingredients:

1 Brownie (1 Meal)
1 Banana Pudding (1 Meal)
2 tbsp light cream cheese (2 Condiments)
5 tbsp water


Directions:

Combine brownie mix with 2 tbsp water until well blended. Spray a plate lightly with Pam. Spread batter on to plate to form two round circles. Microwave for about 1 minute and 30 seconds. Microwave times may vary. Try doing 1 minute first and then check to see if it is done. Let cool. In a small bowl, combine pudding, cream cheese and 3 tbsp water to form a smooth thick batter. Add more water if needed to resemble a thick spread. Spread the batter evenly on both cookies. Serve.
